Yeah, anything by studio Ghibli is a pretty safe bet, enough so that it's not worth mentioning unless you want to recommend to someone that doesn't watch anime.
Fun fact, cartoons were not created for children, this perception came later on...mostly in America. Also, even children's cartoons are chock full of adult jokes, because hey, the people working behind them are, duh, adults, and they know it's a good idea to put something for the poor parents who are forced to watch them by their kids in order to not bore them to death.

-trigun is just great
-rainbow is a seinen with huge mental breakdowns
-samurai champloo is an old school pop culture samurai animeù
-psycho pass with an amaizing plot
-basically every seinen oriented anime
Mirai Nikki/Evangelion were the most well-known ones I've dropped watching, because both Yuki and Shinji were autistic crying beta fa**ots and I hate such male characters.
What's not to like about a story written and planned by a person for years and adapted with thousands of hours of animation work? Japs strive to craft to the best of their ability. That's why anime is enjoyable. Due to the countless hours put into them. Of course then theres garbage like eromanga sensei LUL but that's because they get paid shit money so they gotta make some low effort animus of course.
as if i cared what people think, i just rate it based on how much i like it and wanted to watch it. when i watch something good i want to keep watching next episode and when i watch stupid shit like bakemonogatari or zetsuen no tempest i just wanted to stop after each and every episode and had no clue what there was to like about those shows

Out of relatively known, I would suggest TTGL, KLK, Cowboy Beebop, Black Lagoon, Full Metal Panic and Redline.
The last one I may suggest heavily, as it is really enjoyable, for how short it is to watch.
Recently enjoyed Little Witch Academia and less recently 91 Days. Former probably because I am a Triggerfag.
